4 chicken sausages (mild or spicy, your choice)

2 medium zucchinis, sliced into half-moons

1 cup cherry tomatoes, halved

3 cloves garlic, minced

1 onion, diced

2 cups whole wheat pasta (or pasta of your choice)

2 tablespoons olive oil

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper to taste

Fresh basil for garnish

Grated Parmesan cheese for serving

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

    Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, ensuring they don't burn. Sauté for about 2-3 minutes until the onion becomes translucent.

      Add the Chicken Sausages: Slice the chicken sausages into bite-sized pieces and add them to the skillet. Cook for 5-7 minutes, stirring occasionally, until they are browned and cooked through.

        Incorporate Zucchini and Tomatoes: Stir in the sliced zucchinis and cherry tomatoes. Sprinkle with oregano, basil, salt, and pepper. Cook for another 5-7 minutes until the zucchini is tender and the tomatoes begin to soften.

          Combine with Pasta: Add the cooked pasta to the skillet along with a splash of the reserved pasta water. Toss everything together for a couple of minutes over medium heat until well combined and heated through. Adjust seasoning if needed.
