8 oz. rice noodles

1 lb. boneless, skinless chicken thighs, sliced into thin strips

2 tablespoons vegetable oil

1 bell pepper, thinly sliced (red or yellow)

2 cups broccoli florets

3 green onions, chopped

4 cloves of garlic, minced

1 tablespoon fresh ginger, minced

1/4 cup soy sauce (low sodium)

2 tablespoons mirin (sweet rice wine)

1 tablespoon sesame oil

2 tablespoons brown sugar

1 tablespoon cornstarch mixed with 1 tablespoon water (for thickening)

Sesame seeds and additional green onions for garnish

Instructions
 

Begin by cooking the rice noodles according to package instructions. Drain and rinse under cold water to stop cooking, then set aside.

    In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the sliced chicken and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

      In the same skillet, add the sliced bell pepper, broccoli florets, minced garlic, and ginger. Stir-fry for 3-4 minutes until the vegetables are tender but still crisp.

        While the veggies are cooking, prepare the teriyaki sauce by combining soy sauce, mirin, sesame oil, and brown sugar in a small bowl. Stir until the sugar is dissolved.

          Return the chicken to the skillet, then pour the teriyaki sauce over the chicken and vegetables. Toss to coat evenly.

            Add the cornstarch mixture to the skillet and stir quickly, allowing the sauce to thicken (about 1-2 minutes). If the sauce is too thick, add a bit of water until the desired consistency is reached.

              Add the cooked noodles into the skillet, tossing everything together until the noodles are heated through and coated with the sauce.

                Remove from heat and garnish with sesame seeds and chopped green onions before serving.
