4 bone-in, skin-on chicken thighs

2 tablespoons olive oil

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 green bell pepper, sliced

1 medium onion, sliced

3 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon dried oregano

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon red pepper flakes (optional for heat)

Juice of 1 lemon

Fresh parsley for garnish

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Chicken: Pat the chicken thighs dry with paper towels. In a large bowl, mix the olive oil, smoked paprika, dried oregano, salt, black pepper, red pepper flakes (if using), and lemon juice. Add the chicken thighs and toss them to coat evenly in the marinade. Let them marinate for at least 15 minutes, or up to 2 hours in the refrigerator for more flavor.

      Sauté the Vegetables: In a large oven-safe skillet, heat a tablespoon of olive oil over medium heat. Add the sliced onions and sauté for about 5 minutes until they begin to soften. Then, add in the sliced bell peppers and minced garlic. Sauté for another 5-7 minutes until the veggies are tender but still vibrant.

        Add Chicken to the Skillet: Push the sautéed vegetables to the side of the skillet and place the marinated chicken thighs, skin-side down, in the center. Sear them for about 5 minutes until the skin is golden brown, then flip the chicken thighs over.

          Bake the Dish: Transfer the skillet to the preheated oven and bake for about 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C). The skin should be crispy and the peppers tender.
