Chicken Zucchini Casserole

2 cups cooked chicken, shredded or diced

3 medium zucchinis, thinly sliced

1 cup cherry tomatoes, halved

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

2 cloves garlic, minced

1 teaspoon dried basil

1 teaspoon dried oregano

Salt and pepper to taste

2 tablespoons olive oil

1/2 cup breadcrumbs (optional, for topping)

Fresh basil leaves for garnish

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C).

    Prepare Zucchini: In a large bowl, toss the sliced zucchinis with olive oil, salt, pepper, garlic, basil, and oregano until well coated. Set aside.

      Layering Ingredients: In a 9x13-inch casserole dish, layer half of the zucchini slices on the bottom. Next, add the cooked chicken evenly over the zucchini.

        Add Ricotta: In small dollops, spread the ricotta cheese across the chicken layer.

          Tomatoes: Sprinkle the halved cherry tomatoes over the ricotta, then layer the remaining zucchini on top.

            Cheese Topping: Sprinkle shredded mozzarella and grated Parmesan cheese over the zucchini. If desired, top with breadcrumbs for a crunchy finish.

              Bake: Cover the casserole with aluminum foil and bake in the preheated oven for 25 minutes. Then, remove the foil and bake for an additional 15 minutes, or until the cheese is gooey and golden brown.

                Garnish & Serve: Remove from the oven and let it cool for a few minutes. Garnish with fresh basil leaves before serving.
