Ingredients

12 wonton wrappers

2 large poblano peppers

1 cup shredded Oaxaca cheese (or Monterey Jack)

1/2 cup cream cheese, softened

1/4 cup finely chopped red onion

1/4 teaspoon garlic powder

1/4 teaspoon cumin

Salt and pepper to taste

Oil for frying

For Jalapeño Soy Sauce:

1/2 cup soy sauce

1 fresh jalapeño, finely chopped

2 tablespoons honey

1 tablespoon rice vinegar

1 teaspoon sesame oil

1 green onion, thinly sliced

Instructions

Roast the Poblano Peppers: Preheat your oven to 450°F (230°C). Place the poblano peppers on a baking sheet and roast in the oven for about 20 minutes or until the skin is charred and blistered. Remove the peppers from the oven and let them cool. Once cool, peel off the skin, remove the seeds, and chop them into small pieces.

Prepare the Filling: In a large mixing bowl, combine the roasted poblano peppers, Oaxaca cheese, cream cheese, red onion, garlic powder, cumin, salt, and pepper. Mix until well combined and creamy.

Assemble the Wontons: Lay a wonton wrapper on a clean surface and place about a tablespoon of the filling in the center of the wrapper. Moisten the edges of the wonton with water. Fold the wrapper over the filling to create a triangle and press the edges to seal. Alternatively, you can also create a purse shape by gathering the edges together. Repeat with the remaining wonton wrappers and filling.

Fry the Wontons: Heat oil in a deep skillet or frying pan over medium-high heat. Once the oil is hot, carefully add several wontons (don’t overcrowd the pan). Fry for about 3-4 minutes on each side or until golden brown and crispy. Remove with a slotted spoon and drain on a paper towel.

Make the Jalapeño Soy Sauce: In a small bowl, combine soy sauce, chopped jalapeño, honey, rice vinegar, and sesame oil. Whisk until thoroughly mixed. Stir in sliced green onion.

Serve: Arrange the crispy wontons on a serving platter and serve hot with the jalapeño soy sauce for dipping.
