Ingredients

2 (6 oz) Chilean sea bass fillets

2 tablespoons olive oil

1 teaspoon sea salt

½ teaspoon black pepper

Zest and juice of 1 lemon

Zest and juice of 1 orange

2 cloves garlic, minced

1 tablespoon fresh thyme leaves, chopped

1 tablespoon fresh dill, chopped

½ teaspoon red pepper flakes (optional)

¼ cup vegetable or chicken broth

Fresh parsley, chopped (for garnish)

Instructions

Marinade Preparation: In a small bowl, combine the olive oil, sea salt, black pepper, lemon zest and juice, orange zest and juice, minced garlic, fresh thyme, dill, and red pepper flakes. Mix well.

Marinate the Fish: Place the Chilean sea bass fillets in a shallow dish and pour the marinade over them. Allow the fish to marinate for at least 30 minutes or up to 2 hours in the refrigerator for enhanced flavor.

Preheat the Oven: Preheat your oven to 400°F (200°C).

Searing the Fillets: Heat a large, oven-safe skillet over medium-high heat. Add a drizzle of olive oil. Once hot, carefully place the marinated sea bass fillets skin-side down in the skillet. Sear for about 3-4 minutes until the skin is crispy.

Baking the Fish: Carefully flip the sea bass fillets, then add the vegetable or chicken broth to the skillet. Transfer the skillet to the preheated oven and bake for 8-10 minutes, or until the fish flakes easily with a fork.

Serving: Once done, remove from the oven and let rest for a minute. Plate the Chilean sea bass and drizzle with some of the pan juices. Garnish with freshly chopped parsley.

Enjoy: Serve immediately with a side of roasted vegetables or over a bed of quinoa for a complete meal!
