Ingredients
  

1 lb ground beef (or turkey for a leaner option)

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

1 can (14.5 oz) diced tomatoes, with juices

1 can (6 oz) tomato paste

1 large onion, chopped

3 cloves garlic, minced

1 bell pepper (any color), diced

2 teaspoons chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (adjust to taste)

Salt and pepper, to taste

2 cups beef or vegetable broth

1 tablespoon olive oil

Optional toppings: shredded cheese, sour cream, chopped green onions, cilantro

Instructions
 

In a large pot or Dutch oven, heat olive oil over medium heat. Add chopped onion and diced bell pepper; sauté until softened, about 5 minutes.

    Stir in the minced garlic and cook for an additional minute, until fragrant.

      Add the ground beef (or turkey) to the pot, breaking it up with a spoon. Cook until browned and no longer pink, about 6-8 minutes. Drain excess fat if needed.

        Stir in the chili powder, cumin, smoked paprika, cayenne pepper, salt, and pepper. Cook for another 1-2 minutes to toast the spices.

          Pour in the diced tomatoes with their juices, tomato paste, and broth. Bring the mixture to a simmer.

            Add the kidney beans and black beans, stirring to combine all ingredients.

              Reduce the heat to low, cover, and let the chili simmer for 30-40 minutes, stirring occasionally. This allows the flavors to meld together.

                Taste and adjust seasoning, adding more salt, pepper, or cayenne if desired.

                  Serve hot, topped with your choice of shredded cheese, sour cream, green onions, or cilantro.
