Chipotle Christmas Chicken Pasta in Creamy Heat

Ingredients
  

12 oz penne pasta

2 boneless, skinless chicken breasts (sliced)

2 tablespoons olive oil

1 tablespoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried oregano

1 cup heavy cream

1 cup chicken broth

1 cup shredded chipotle cheddar cheese

1 cup frozen corn

1 red bell pepper (diced)

1/2 cup chopped fresh cilantro

Salt and pepper to taste

Juice of 1 lime

1/2 teaspoon red pepper flakes (optional, for extra heat)

Instructions
 

Cook the Pasta:

    Bring a large pot of salted water to a boil. Add penne pasta and cook according to package directions until al dente. Drain and set aside.

      Prepare the Chicken:

        In a mixing bowl, season sliced chicken with olive oil, smoked paprika, garlic powder, onion powder, dried oregano, salt, and pepper. Toss to coat evenly.

          Cook the Chicken:

            In a large skillet over medium heat, add a tablespoon of olive oil. Sauté the seasoned chicken until golden brown and cooked through, about 6-8 minutes. Remove from skillet and set aside.

              Create the Sauce:

                In the same skillet, add diced red bell pepper and cook for about 3 minutes until softened. Pour in the heavy cream and chicken broth, stirring to combine. Let it simmer for a couple of minutes.

                  Add Cheese & Corn:

                    Reduce heat to low and gradually whisk in the shredded chipotle cheddar cheese until melted and creamy. Stir in the frozen corn and cooked chicken, allowing everything to heat through.

                      Combine Pasta & Sauce:

                        Add the cooked penne to the skillet, tossing everything gently to coat the pasta in the creamy sauce. Squeeze in the lime juice for a fresh, zesty flavor. Adjust seasoning with extra salt, pepper, or red pepper flakes, if desired.

                          Garnish and Serve:

                            Remove from heat and stir in chopped fresh cilantro for an added festive touch. Serve immediately, garnished with extra cheese and cilantro on top if desired.
