1 lb large shrimp, peeled and deveined

2 tablespoons olive oil

2 tablespoons chipotle pepper in adobo sauce, minced

1/4 cup fresh lime juice (about 2 limes)

2 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon cumin

Salt and pepper to taste

2 cups cooked brown rice or quinoa

1 cup corn (fresh, frozen, or canned)

1 cup black beans, drained and rinsed

1 cup cherry tomatoes, halved

1 avocado, diced

1/4 cup fresh cilantro, chopped

Lime wedges for serving

Marinate the Shrimp: In a medium bowl, combine olive oil, minced chipotle pepper, lime juice, minced garlic, smoked paprika, cumin, salt, and pepper. Add the shrimp to the bowl and toss to coat. Let the shrimp marinate for at least 15-30 minutes.

    Cook the Shrimp: Heat a large skillet over medium heat. Add the marinated shrimp in a single layer and cook for about 2-3 minutes on each side or until the shrimp are pink and opaque. Remove from heat.
