Ingredients
  

1 lb large shrimp, peeled and deveined

2 tablespoons chipotle in adobo sauce, chopped

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon cumin

1 lime, juiced

Salt and pepper to taste

8 small corn tortillas

1 cup red cabbage, thinly sliced

1 avocado, sliced

Fresh cilantro, for garnish

Sour cream or Greek yogurt, for serving (optional)

Salsa or pico de gallo, for topping (optional)

Instructions
 

In a bowl, combine the chipotle in adobo sauce, olive oil, smoked paprika, cumin, lime juice, salt, and pepper to create a marinade.

    Add the shrimp to the marinade, tossing to coat evenly. Allow to marinate for at least 15 minutes while you prepare the toppings.

      Preheat a grill or skillet over medium-high heat. Once hot, add the marinated shrimp in a single layer and cook for 2-3 minutes on each side, or until they turn pink and opaque.

        While the shrimp are cooking, warm the corn tortillas on the grill or in a separate skillet until pliable.

          Assemble the tacos by placing a few shrimp in each tortilla. Top with the sliced red cabbage, avocado slices, and fresh cilantro.

            If desired, add a dollop of sour cream or Greek yogurt and a spoonful of salsa or pico de gallo to each taco.

              Serve immediately and enjoy your spicy chipotle shrimp tacos!
