Chocolate Chip Cheesecake Cookies

Ingredients
  

For the Cookie Base:

- 1 cup unsalted butter, softened (2 sticks)

- 3/4 cup granulated sugar

- 3/4 cup packed brown sugar

- 2 large eggs

- 1 teaspoon vanilla extract

- 2 1/2 cups all-purpose flour

- 1 teaspoon baking soda

- 1/2 teaspoon salt

- 1 cup semi-sweet chocolate chips

For the Cheesecake Filling:

- 8 oz cream cheese, softened

- 1/2 cup confectioners' sugar

- 1/2 teaspoon vanilla extract

- 1 large egg yolk

Instructions
 

1. Preheat the Oven: Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.

    2. Make the Cookie Dough:

      - In a large bowl, cream together the softened butter, granulated sugar, and brown sugar using an electric mixer until light and fluffy (about 2-3 minutes).

        - Beat in the eggs one at a time, followed by the vanilla extract, mixing until fully combined.

          - In another bowl, whisk together the flour, baking soda, and salt.

            - Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the chocolate chips using a spatula.

              3. Prepare the Cheesecake Filling:

                - In a medium bowl, beat together the softened cream cheese, confectioners' sugar, vanilla extract, and egg yolk until smooth and creamy.

                  4. Assemble the Cookies:

                    - Using a cookie scoop or tablespoon, scoop out a portion of the cookie dough (about 1 tablespoon) and place it on the prepared baking sheet.

                      - Create an indent in the center of each dough ball with your thumb.

                        - Fill the indent with about 1 teaspoon of the cheesecake filling, then cover with another scoop of the cookie dough. Gently press down to seal the filling inside.

                          5. Bake:

                            - Bake the cookies in the preheated oven for 10-12 minutes or until the edges are lightly golden while the centers remain soft.

                              - Allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.

                                6. Enjoy: Once cooled, serve and enjoy your delicious Chocolate Chip Cheesecake Cookies with a glass of milk or your favorite beverage!
