Instructions

Prepare the Cake: Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan. In a medium bowl, sift together flour, cocoa powder, baking powder, baking soda, and salt.

Cream Butter and Sugar: In a large mixing bowl, beat the softened butter and granulated sugar together until light and fluffy. Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.

Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the butter mixture, alternating with the whole milk. Mix until just combined and smooth.

Bake the Cake: Pour the batter into the prepared cake pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool in the pan for 10 minutes, then turn onto a wire rack to cool completely.

Prepare the Three Milks Mixture: In a medium bowl, whisk together the sweetened condensed milk, evaporated milk, and mango lassi until well combined.

Soak the Cake: Once the cake has cooled completely, pierce it all over with a fork or toothpick. Slowly drizzle the three milks mixture over the cake, allowing it to soak in. Let it rest for at least 30 minutes, or refrigerate for a few hours for maximum absorption.

Make the Whipped Cream Frosting: In a large bowl, whip the heavy cream until soft peaks form. Gradually add the powdered sugar and vanilla extract, continuing to whip until stiff peaks form.

Assemble the Cake: Spread the whipped cream frosting evenly over the top of the soaked cake. Garnish with diced mango and chocolate shavings or a dusting of cocoa powder.

Serve: Slice the cake and serve chilled. Enjoy your refreshing twist on tres leches cake!
