1 cup maraschino cherries (drained)

1 cup almond flour

1/2 cup granulated sugar

1/4 cup unsweetened cocoa powder

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 teaspoon vanilla extract

2 large eggs

1/4 cup melted coconut oil

1/4 cup dark chocolate chips

1/3 cup powdered sugar (for coating)

Red and green sprinkles (for decoration)

Instructions
 

Prep the Cherries: Pat the maraschino cherries dry with paper towels to remove excess moisture.

    Mix the Dry Ingredients: In a medium bowl, whisk together almond flour, granulated sugar, cocoa powder, baking powder, and salt until well combined.

      Combine Wet Ingredients: In a separate bowl, whisk together the eggs, vanilla extract, and melted coconut oil until smooth.

        Combine Mixtures: Pour the wet ingredients into the dry ingredients and stir until a thick batter forms. Then, gently fold in the dark chocolate chips.

          Form the Bombs: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper. Using your hands, scoop a small amount of batter, flatten it, and place a cherry in the center. Carefully wrap the batter around the cherry to form a ball. Repeat until all batter and cherries are used.

            Bake: Place the cherry bombs on the prepared baking sheet and bake for 15-18 minutes or until the tops are set and a toothpick comes out clean.

              Coat with Sugar: Let the bombs cool for a few minutes before rolling them in powdered sugar and topping with festive sprinkles.

                Serve: Allow them to cool completely on a wire rack before serving to guests or storing in an airtight container.
