1 cup maraschino cherries (drained and patted dry)

1 cup cream cheese (softened)

1/2 cup powdered sugar

1 teaspoon vanilla extract

1 cup semisweet chocolate chips

1 tablespoon coconut oil

Red and green sprinkles (for decoration)

In a mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Beat with a hand mixer until smooth and fluffy.

    Take a maraschino cherry and scoop a small amount of the cream cheese mixture, then carefully envelop the cherry with the cream, forming a ball. Repeat until all cherries are coated. Chill the stuffed cherries in the refrigerator for about 30 minutes to firm up.

      While the cherries are chilling, prepare the chocolate coating. Melt the semisweet chocolate chips and coconut oil together in a microwave-safe bowl, heating in 30-second intervals and stirring until smooth.

        Remove the cherries from the fridge. Dip each cream cheese-covered cherry in the melted chocolate, using a fork to ensure even coverage. Let the excess chocolate drip off, then place the chocolate-covered cherry on a baking sheet lined with parchment paper.

          While the chocolate is still wet, immediately sprinkle red and green sprinkles on top for festive decoration.

            Once all cherries are coated, refrigerate them for an additional 30 minutes or until the chocolate hardens completely.
