2 cups cooked chicken breast, shredded

1 cup fresh cranberries (or 1/2 cup dried cranberries if fresh is unavailable)

1/2 cup celery, diced

1/2 cup red grapes, halved

1/4 cup walnuts or pecans, chopped

1/4 cup red onion, finely chopped

1/2 cup Greek yogurt (or mayonnaise for a creamier texture)

1 tablespoon honey

1 tablespoon Dijon mustard

1 tablespoon apple cider vinegar

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Mixed greens for serving (optional)

Instructions
 

Prepare the Chicken: If not already done, cook the chicken breast by poaching or baking it until fully cooked. Let it cool, then shred it into bite-sized pieces.
