1 cup (200g) granulated sugar

1/2 cup (100g) packed brown sugar

1/2 cup (1 stick) unsalted butter, softened

2 large eggs

1 teaspoon vanilla extract

1 teaspoon peppermint extract (optional)

1 1/2 cups (190g) all-purpose flour

1/2 cup (40g) cocoa powder

2 teaspoons baking powder

1/4 teaspoon salt

Powdered sugar for coating

Preheat the Oven: Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.

    Mix the Wet Ingredients: In a large mixing bowl, cream together the granulated sugar, brown sugar, and softened butter until light and fluffy. This should take about 2-3 minutes with an electric mixer.

      Add Eggs and Extracts: Beat in the eggs one at a time, mixing well after each addition. Add the vanilla extract and peppermint extract (if using), and mix until combined.

        Combine Dry Ingredients: In another bowl, sift together the flour, cocoa powder, baking powder, and salt. Gradually add this mixture to the wet ingredients, stirring until just combined. Don’t overmix.

          Chill the Dough: Cover the mixing bowl with plastic wrap and refrigerate the dough for at least 30 minutes. This will help the cookies keep their shape while baking.

            Form the Cookies: Once chilled, use a tablespoon or cookie scoop to portion out the dough. Roll each portion into a ball, then roll the balls in powdered sugar until well coated. Place them on the prepared baking sheets, leaving about 2 inches between each ball.

              Bake: Bake in the preheated oven for 10-12 minutes, or until the cookies are set and crinkled on top but still soft in the center.
