Christmas Eve Lasagna

Ingredients
  

12 lasagna noodles

2 tablespoons olive oil

1 onion, finely chopped

2 cloves garlic, minced

1 pound ground beef

1 pound Italian sausage, casing removed

1 large zucchini, diced

1 red bell pepper, diced

2 cups fresh spinach

2 cups ricotta cheese

1 egg

3 cups marinara sauce

3 cups shredded mozzarella cheese

1 cup grated Parmesan cheese

2 teaspoons dried Italian herbs (basil, oregano, thyme)

Salt and pepper, to taste

Fresh basil for garnish (optional)

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C).

    Cook Noodles: Bring a large pot of salted water to a boil. Cook the lasagna noodles according to package instructions until al dente. Drain and set aside.

      Prepare Meat Mixture: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until fragrant and translucent (about 3-5 minutes). Add ground beef and Italian sausage. Cook until browned, breaking it apart as it cooks. Drain excess fat.

        Add Vegetables: Stir in the diced zucchini, red bell pepper, and fresh spinach. Cook until the vegetables are tender (about 5-7 minutes). Season with Italian herbs, salt, and pepper. Remove from heat.

          Mix Ricotta Filling: In a medium bowl, combine ricotta cheese, egg, a pinch of salt, and a half cup of mozzarella cheese. Mix until smooth.

            Layer the Lasagna: In a 9x13 inch baking dish, spread a thin layer of marinara sauce at the bottom. Place 3 noodles over the sauce. Spread half of the ricotta mixture over the noodles, followed by half of the meat and vegetable mixture, a third of the marinara sauce, and a sprinkle of mozzarella cheese. Repeat the layers ending with a final layer of noodles topped with remaining marinara sauce and remaining mozzarella and Parmesan cheese.

              Bake: Cover the lasagna with foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 15-20 minutes or until the cheese is bubbly and golden. Let it cool for 10 minutes before slicing.

                Garnish & Serve: Garnish with fresh basil leaves if desired. Serve hot and enjoy a delightful Christmas Eve dinner!
