Christmas Eve Lasagna (Festive Lasagna Bolognese!)

Ingredients
  

2 tablespoons olive oil

1 onion, finely chopped

2 garlic cloves, minced

1 carrot, grated

1 celery stalk, finely diced

500g ground beef

300g ground pork

1 can (400g) diced tomatoes

2 tablespoons tomato paste

1 cup red wine (preferably Italian)

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper, to taste

12 lasagna noodles

500g ricotta cheese

2 cups mozzarella cheese, shredded

1 cup grated Parmesan cheese

Fresh basil leaves for garnish

Instructions
 

Make the Meat Sauce: In a large skillet, heat olive oil over medium heat. Add onions, garlic, carrot, and celery. Sauté for about 5-7 minutes, or until softened.

    Brown the Meat: Add the ground beef and pork to the mixture. Cook until browned and crumbly, about 10 minutes.

      Add Tomatoes and Wine: Stir in the diced tomatoes, tomato paste, red wine, oregano, basil, salt, and pepper. Bring to a simmer and reduce heat to low. Let it cook for 30-40 minutes, stirring occasionally.

        Prepare the Cheese Mixture: In a separate bowl, combine ricotta cheese with a pinch of salt and pepper. Mix until smooth.

          Cook the Noodles: Fill a large pot with water, bring to a boil, and add a pinch of salt. Cook the lasagna noodles according to package directions until al dente. Drain and lay them out on a clean surface to prevent sticking.

            Assemble the Lasagna: Preheat your oven to 180°C (350°F). In a large baking dish, spread a thin layer of meat sauce on the bottom. Place 3 noodles on top, then spread half of the ricotta mixture, followed by a layer of meat sauce and a third of the mozzarella. Repeat the layers, finishing with noodles, meat sauce, and the remaining mozzarella and Parmesan cheese on top.

              Bake: Cover the lasagna with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 15-20 minutes or until the cheese is golden and bubbly.

                Garnish and Serve: Let the lasagna cool for 10 minutes before slicing. Garnish with fresh basil leaves. Serve warm and enjoy the festive flavors!
