Christmas Sausage & Herb Stuffing Bites

Ingredients
  

1 pound Italian sausage (mild or spicy, your choice)

1 cup celery, finely chopped

1 cup onion, finely chopped

3 cups day-old bread, cubed (or stuffing mix)

1 cup chicken broth

2 large eggs

1 teaspoon dried thyme

1 teaspoon dried sage

1 teaspoon dried rosemary

½ teaspoon black pepper

¼ cup fresh parsley, chopped

1 cup cheese (cheddar or mozzarella), shredded

Olive oil, for greasing

Instructions
 

Preheat your oven to 350°F (175°C). Grease a mini muffin tin with olive oil to prevent sticking.

    In a large skillet over medium heat, add the Italian sausage, breaking it apart with a wooden spoon. Cook until browned and fully cooked (about 5-7 minutes). Remove excess grease if necessary.

      Add the chopped celery and onions to the skillet with the sausage and sauté for about 5 minutes until the vegetables are softened.

        In a large mixing bowl, combine the cooked sausage and vegetable mixture with the cubed bread and pour in the chicken broth. Mix well until the bread is moistened.

          In a separate bowl, whisk together the eggs, thyme, sage, rosemary, black pepper, and parsley. Pour this mixture over the bread and sausage mixture, and fold in the cheese.

            Spoon the stuffing mixture into the prepared mini muffin tin, filling each cavity about 3/4 full.

              Bake in the preheated oven for 20-25 minutes or until the bites are golden brown and firm to the touch.

                Allow cooling for a few minutes before removing the bites from the tin. Serve warm, garnished with extra fresh parsley if desired.
