Ingredients

1 ½ cups all-purpose flour

½ tsp baking powder

¼ tsp salt

½ cup unsalted butter, softened

¾ cup granulated sugar

1 large egg

1 tsp vanilla extract

1 tsp almond extract (optional)

1 cup powdered sugar (for rim)

Red and green sprinkles (for decoration)

1 cup eggnog (or milk) for filling

Optional: whipped cream for topping

Instructions

Preheat Oven: Preheat your oven to 350°F (175°C) and grease or line a mini muffin tin with paper liners.

Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, and salt until well combined. Set aside.

Cream Butter and Sugar: In a large mixing bowl, beat together the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.

Add Egg and Extracts: Add the egg, vanilla extract, and almond extract (if using) to the butter mixture. Beat until fully incorporated.

Combine Mixtures: Gradually add the dry ingredient mixture to the wet ingredients, mixing on low speed until just combined.

Form Cookie Cups: Use a cookie scoop or a tablespoon to drop a small amount of dough into each muffin cup. Gently press the dough to form cups (there should be a well in the center).

Bake: Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden. Remove from the oven and let cool for a few minutes before carefully removing the cookie cups from the muffin tin. Allow them to cool completely on a wire rack.

Prepare the Rim: While the cookie cups are cooling, place the powdered sugar on a plate. Dip the rim of each cookie cup in a bit of water or eggnog, then roll it in the powdered sugar. Follow with dipping in red and green sprinkles for a festive touch.

Fill Cookie Shots: Once cooled, fill each cookie shot with eggnog (or milk) until almost full.

Optional Topping: Top with a dollop of whipped cream if desired.

Serve: Serve immediately and enjoy these delightful Christmas Sugar Cookie Shots with friends and family!
