Christmas Sun-Dried Tomato Chicken in Cozy Garlic Cream

Ingredients
  

4 boneless, skinless chicken breasts

1 cup sun-dried tomatoes, chopped (in oil, drained)

1 cup heavy cream

4 cloves garlic, minced

1 medium onion, finely chopped

1 cup chicken broth

½ cup grated Parmesan cheese

2 tablespoons olive oil

1 teaspoon dried basil

1 teaspoon dried oregano

Salt and pepper to taste

Fresh basil leaves for garnish

Prepare Chicken: Season the chicken breasts with salt, pepper, dried basil, and dried oregano. Set aside.

    Sear Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the seasoned chicken breasts and cook for 6-7 minutes on each side or until golden brown and cooked through. Remove from the skillet and set aside.

      Sauté Aromatics: In the same skillet, lower the heat to medium. Add the chopped onion and minced garlic; sauté until the onion is translucent and fragrant, about 3-4 minutes.

        Create Sauce: Pour in the chicken broth, scraping the bottom of the pan to deglaze. Allow it to simmer for about 2-3 minutes. Then stir in the sun-dried tomatoes and heavy cream, mixing well.

          Add Cheese: Gradually stir in the grated Parmesan cheese until the sauce is smooth and creamy. Season with additional salt and pepper, to taste.

            Combine Chicken and Sauce: Return the seared chicken breasts to the skillet, spooning the cozy garlic cream sauce over each piece. Simmer for an additional 5 minutes, allowing the chicken to absorb the flavors.

              Garnish and Serve: Once done, garnish with fresh basil leaves and serve warm, ideally over a bed of pasta or with crusty bread to soak up that delicious sauce.
