Ingredients
  

For the Chocolate Cake:

1 cup all-purpose flour

1 cup granulated sugar

½ cup unsweetened cocoa powder

1 tsp baking powder

½ tsp baking soda

¼ tsp salt

3 large eggs

½ cup whole milk

¼ cup vegetable oil

1 tsp vanilla extract

½ cup boiling water

For the Chocolate Ganache:

1 cup heavy cream

8 oz dark chocolate, chopped

2 tbsp unsalted butter

For the Decoration:

Powdered sugar (for dusting)

Fresh berries (raspberries or strawberries)

Edible gold leaf or sprinkles (optional)

Instructions
 

Prepare the Oven and Sheet Pan: Preheat your oven to 350°F (175°C). Line a 15x10-inch jelly roll pan with parchment paper, leaving some overhang on the edges.

    Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt until combined.

      Combine Wet Ingredients: In another bowl, whisk together the eggs, milk, vegetable oil, and vanilla extract until smooth.

        Combine Mixtures: Gradually add the wet ingredients to the dry ingredients, mixing gently until just combined. Carefully stir in the boiling water until the batter is smooth and thin.

          Bake the Cake: Pour the batter into the prepared sheet pan and spread it evenly. Bake in the preheated oven for 15-20 minutes, or until a toothpick inserted in the center comes out clean.

            Cool and Roll: Remove the cake from the oven and allow it to cool in the pan for about 10 minutes. Sprinkle a thin layer of powdered sugar over a clean kitchen towel. Invert the cake onto the towel, remove the parchment paper, and roll it up from the short end, using the towel to help. Allow to cool completely while rolled.

              Prepare Ganache: In a small saucepan, heat the heavy cream over medium heat until just boiling. Remove from heat and add the chopped dark chocolate and butter. Let it sit for a few minutes, then whisk until smooth and glossy. Allow it to cool slightly until it thickens.

                Assemble the Yule Log: Once the cake has cooled, carefully unroll it and spread a layer of ganache inside the cake, then roll it back up (without the towel this time). Place it seam side down on a serving platter.

                  Frost the Outside: Use the remaining ganache to frost the outside of the rolled cake, creating a rustic bark texture with a spatula or the back of a spoon.

                    Decorate: Dust the cake lightly with powdered sugar for a snowy effect, and add fresh berries on top. Optionally, decorate with edible gold leaf or festive sprinkles.

                      Chill and Serve: Refrigerate the Yule log for at least an hour to set before slicing. Serve chilled or at room temperature, and enjoy a slice of delightful holiday cheer!
