Ingredients
  

2 cups rolled oats

1 cups milk (or plant-based milk)

1/2 cup Greek yogurt (or applesauce for a dairy-free option)

2 large eggs

1/4 cup maple syrup or honey

1 tsp vanilla extract

1 tsp baking powder

1 tsp cinnamon

1/4 tsp salt

1/2 cup chopped walnuts or pecans (optional)

1/4 cup raisins or chocolate chips (optional)

Cinnamon Swirl:

2 tbsp melted butter or coconut oil

1/4 cup brown sugar

1 tsp cinnamon

Frosting (optional):

1/2 cup cream cheese, softened

1 cup powdered sugar

1-2 tbsp milk (adjust for desired consistency)

1 tsp vanilla extract

Instructions
 

Preheat Oven: Preheat your oven to 350F (175C) and grease an 8x8 inch baking dish.

    Prepare the Oat Mixture: In a large mixing bowl, combine rolled oats, milk, Greek yogurt (or applesauce), eggs, maple syrup, vanilla extract, baking powder, cinnamon, and salt. Stir until well combined. Add in nuts and raisins/chocolate chips if using.

      Make the Cinnamon Swirl: In a small bowl, mix melted butter (or coconut oil), brown sugar, and cinnamon until smooth.

        Layer the Oat Mixture: Pour half of the oat mixture into the prepared baking dish, spreading it evenly. Drizzle half of the cinnamon swirl mixture over the oats. Pour the remaining oat mixture on top, then drizzle the remaining cinnamon swirl mixture on top, creating a marbled effect by gently swirling with a knife or toothpick.

          Bake: Place in the oven and bake for 30-35 minutes, or until the top is set and a toothpick inserted comes out clean.

            Prepare the Frosting: While the baked oatmeal is cooling, beat together cream cheese, powdered sugar, milk, and vanilla extract until smooth. Adjust milk for desired consistency.

              Serve: Allow the oatmeal squares to cool for a few minutes in the pan before slicing into squares. Drizzle with cream cheese frosting if desired.

                Enjoy: Serve warm or at room temperature, and store leftovers in an airtight container in the fridge for up to 5 days. Warm them up in the microwave for a quick breakfast!
