6 slices of bread (white or whole wheat)

4 large eggs

1/4 cup milk (any type)

1 tablespoon vanilla extract

1 teaspoon ground cinnamon

1/4 cup sugar

1/2 cup cream cheese, softened

1/4 cup brown sugar

2 tablespoons cinnamon

1/4 cup butter (for frying)

Powdered sugar (for dusting)

Maple syrup (for serving)

Prepare the Filling: In a mixing bowl, combine the softened cream cheese, brown sugar, and 2 tablespoons of cinnamon. Mix until smooth and well blended. Set aside.

    Roll the Bread: Take a slice of bread and carefully flatten it with a rolling pin. Spread about 1-2 tablespoons of the cream cheese mixture evenly over the bread slice. Roll it up tightly, starting from one end. Repeat with the remaining bread slices.

      Make the Egg Mixture: In a shallow dish, whisk together the eggs, milk, vanilla extract, and ground cinnamon until well combined.

        Coat the Roll-Ups: Dip each rolled bread piece into the egg mixture, making sure to coat all sides but not soak them too long to avoid sogginess.

          Fry the Roll-Ups: Heat a large skillet or griddle over medium heat and melt the butter. Once hot, add the roll-ups seam side down. Cook for about 2-3 minutes on each side, until golden brown and slightly crispy.

            Sugar Coating: In a small bowl, mix the remaining sugar and cinnamon. Once the roll-ups are done cooking, immediately roll them in the cinnamon sugar mix until coated.
