For the Pumpkin Bread:

1 cup canned pumpkin puree

1/2 cup vegetable oil

1/2 cup brown sugar

1/2 cup granulated sugar

2 large eggs

1 tsp vanilla extract

1 1/2 cups all-purpose flour

1 tsp baking soda

1/2 tsp baking powder

1 tsp ground cinnamon

1/2 tsp ground nutmeg

1/4 tsp ground ginger

1/2 tsp salt

1/2 cup chopped walnuts or pecans (optional)

For the Cinnamon Streusel Topping:

1/3 cup all-purpose flour

1/4 cup brown sugar

1 tsp ground cinnamon

2 tbsp unsalted butter, melted

1/4 cup rolled oats

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper for easy removal.

    Mix Wet Ingredients: In a large bowl, combine the pumpkin puree, vegetable oil, brown sugar, granulated sugar, eggs, and vanilla extract. Whisk until the mixture is smooth and well combined.

      Combine Dry Ingredients: In another bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, ginger, and salt.

        Combine Mixtures: Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. If using, fold in the chopped nuts.

          Prepare Streusel Topping: In a small bowl, mix together the flour, brown sugar, and cinnamon for the streusel topping. Stir in the melted butter and oats until the mixture is crumbly and combined.

            Assemble the Bread: Pour half of the pumpkin bread batter into the prepared loaf pan. Sprinkle half of the streusel topping over it. Pour the remaining batter on top and finish by sprinkling the rest of the streusel mixture on the very top.

              Bake: Bake in the preheated oven for 55 to 65 minutes, or until a toothpick inserted in the center comes out clean. If the top is browning too quickly, you can cover it loosely with aluminum foil.
