8 slices of white bread (crusts removed)

4 large eggs

1/2 cup milk

2 teaspoons vanilla extract

1 teaspoon ground cinnamon

1/4 cup granulated sugar

1/4 cup melted butter (for frying)

1/2 cup granulated sugar (for coating)

Additional ground cinnamon (to taste, for coating)

Instructions
 

Prepare Bread: Use a rolling pin to flatten each slice of bread until it is thin and pliable.

    Make the Filling: In a small bowl, combine 1/4 cup of the granulated sugar with 1 teaspoon of cinnamon. Take a tablespoon of your filling (cinnamon sugar mixture) and sprinkle it on one edge of each flattened bread slice. Roll the bread tightly away from the filling and seal the edge with a little water if necessary.

      Prepare Egg Mixture: In a bowl, whisk together the eggs, milk, vanilla extract, and a pinch of salt until well combined.

        Heat the Pan: Heat a non-stick skillet over medium heat and add melted butter.

          Coat the Rolls: Dip each bread roll in the egg mixture, ensuring it’s soaked evenly but not too soggy.

            Cook the Roll-Ups: Place the roll-ups seam side down onto the skillet. Cook for about 2-3 minutes, rolling occasionally until golden and crispy all around.

              Coat with Cinnamon Sugar: In a separate shallow dish, mix the remaining 1/2 cup of sugar with additional ground cinnamon. Once cooked, immediately roll each French toast roll-up in the cinnamon sugar mixture until fully coated.

                Serve: Arrange the roll-ups on a plate and serve warm. Optionally, drizzle with maple syrup or serve with fresh fruit.
