4 ripe bananas, peeled and sliced lengthwise

1/2 cup unsalted butter

1 cup brown sugar, packed

1 teaspoon vanilla extract

1/4 teaspoon ground cinnamon

1/4 cup rum (preferably dark rum)

Vanilla ice cream for serving

Chopped pecans or walnuts (optional, for garnish)

Instructions
 

In a large skillet, melt the butter over medium heat.

    Once the butter has melted, add the brown sugar, stirring until the sugar dissolves and the mixture is smooth.

      Stir in the vanilla extract and ground cinnamon, combining well.

        Add the banana slices to the skillet, cooking for about 2-3 minutes, gently turning them to coat with the sauce.

          Carefully pour the rum over the bananas. Allow it to heat for a few seconds.

            Using a long lighter, ignite the rum carefully to flambé the dish. (Note: Always exercise caution when working with flames.) Let the flames subside on their own to cook off the alcohol flavor, about 30 seconds.

              Remove the skillet from heat and Serve immediately over scoops of vanilla ice cream.

                Garnish with chopped pecans or walnuts, if desired.
