1 cup ricotta cheese, drained

1 cup mascarpone cheese

1 cup powdered sugar, sifted

1 teaspoon vanilla extract

1/2 teaspoon cinnamon

1/2 cup mini chocolate chips

1 package of phyllo dough (8 sheets)

1/4 cup unsalted butter, melted

1/4 cup chopped pistachios (for garnish)

Fresh mint leaves (for garnish)

Instructions
 

Prepare the Filling: In a mixing bowl, combine the ricotta cheese, mascarpone cheese, powdered sugar, vanilla extract, and cinnamon. Mix until smooth and creamy. Gently fold in the mini chocolate chips. Set aside.

    Assemble the Phyllo Dough: Preheat your oven to 375°F (190°C). Carefully lay out one sheet of phyllo dough on a clean surface. Brush the sheet lightly with melted butter. Place another sheet on top and repeat the process, layering a total of 4 sheets.

      Add Filling and Fold: Spread half of the cannoli filling evenly over the layered phyllo dough, leaving a small border. Fold the edges of the dough over the filling and carefully roll it up into a log shape. Repeat this with the remaining phyllo sheets and filling to create a second log.

        Bake the Cannoli Squares: Place the rolled phyllo logs onto a parchment-lined baking tray. Brush the tops with any remaining melted butter. Bake in the preheated oven for 20-25 minutes or until golden brown and crispy.

          Cool and Cut: Remove from the oven and allow them to cool for a few minutes. Once cooled, carefully slice each log into squares.

            Garnish and Serve: Dust the tops of the cannoli squares with additional powdered sugar. Sprinkle with chopped pistachios and garnish with fresh mint leaves. Serve immediately or refrigerate until ready to serve.
