Classic Christmas Crockpot Beef Stew

Ingredients
  

2 pounds of beef chuck roast, trimmed and cut into 1-inch cubes

4 medium carrots, sliced into rounds

3 medium potatoes, diced (Yukon Gold or Russet)

1 large onion, chopped

4 cloves garlic, minced

3 cups beef broth

1 cup red wine (optional; substitute with more beef broth if desired)

2 tablespoons tomato paste

1 tablespoon Worcestershire sauce

2 teaspoons dried thyme

2 teaspoons dried rosemary

1 bay leaf

Salt and pepper, to taste

2 tablespoons olive oil

1 tablespoon flour (optional, for thickening)

Fresh parsley, chopped (for garnish)

Sear the beef: Heat the olive oil in a large skillet over medium-high heat. Season the beef cubes with salt and pepper. Once the oil is hot, add the beef in batches, browning it on all sides (about 5-7 minutes). This step adds depth of flavor to the stew. Transfer the browned beef to the crockpot.

    Prepare vegetables: In the same skillet, add the chopped onion and sauté until translucent, about 3-4 minutes. Stir in the minced garlic and cook for another minute. Add the sauteed onion and garlic to the crockpot.

      Combine ingredients: To the crockpot with beef and vegetables, add the carrots, potatoes, beef broth, red wine (if using), tomato paste, Worcestershire sauce, dried thyme, dried rosemary, and the bay leaf. Stir well to combine.

        Cook the stew: Cover the crockpot and cook on LOW for 8-10 hours or on HIGH for 4-6 hours, until the beef is tender and the flavors have melded.

          Thicken the stew (optional): If you prefer a thicker stew, mix 1 tablespoon of flour with a bit of cold water to create a slurry. Stir into the crockpot about 30 minutes before serving, allowing it time to thicken.

            Serve: Before serving, taste and adjust salt and pepper if needed. Remove the bay leaf. Ladle the stew into bowls and garnish with freshly chopped parsley.
