Classic Creamy Potato Leek Soup Recipe

4 medium-sized Yukon Gold potatoes, peeled and diced

3 large leeks, white and light green parts only, cleaned and sliced

1 medium onion, finely chopped

4 tablespoons unsalted butter

4 cups vegetable or chicken broth

1 cup heavy cream

Salt, to taste

Freshly ground black pepper, to taste

Fresh chives, chopped for garnish

Instructions
 

Sauté the Aromatics: In a large pot, melt the butter over medium heat. Add the chopped onion and leeks, cook until they are soft and translucent, about 5-7 minutes. Make sure to stir occasionally to prevent browning.

    Add the Potatoes: Stir in the diced potatoes, and cook for an additional 2-3 minutes.

      Pour in the Broth: Add the vegetable or chicken broth to the pot. Bring the mixture to a boil, then reduce heat to low and let it simmer uncovered for 20-25 minutes, or until the potatoes are tender.

        Blend the Soup: Once the potatoes are soft, use an immersion blender to puree the soup until smooth. If you don’t have an immersion blender, carefully transfer the mixture to a regular blender in batches and blend until creamy.

          Add Cream and Season: Return the blended soup to the pot, stir in the heavy cream, and season with salt and freshly ground black pepper to taste. Heat through over low heat, but do not let it boil.

            Serve: Ladle the creamy potato leek soup into bowls, and garnish with chopped fresh chives for a pop of color and flavor.
