1 loaf (about 1 pound) of rustic bread, cubed

1 cup unsalted butter

1 large onion, diced

3 celery stalks, diced

3 cloves garlic, minced

1 teaspoon dried sage

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 teaspoon salt

½ teaspoon black pepper

2 cups low-sodium chicken or vegetable broth

2 large eggs, beaten

½ cup fresh parsley, chopped

Prepare the Bread: Preheat your oven to 400°F (200°C). Spread the cubed bread on a large baking sheet and toast in the oven for about 10-12 minutes, or until golden and slightly crispy. Remove from the oven and let cool.

    Sauté Vegetables: In a large skillet over medium heat, melt the butter. Add the diced onion and celery, and sauté until the onion is translucent, about 5-7 minutes. Stir in the minced garlic and cook for another 1-2 minutes until fragrant.

      Combine Ingredients: In a large mixing bowl, combine the toasted bread cubes, sautéed vegetables, sage, thyme, rosemary, salt, pepper, and chopped parsley. Toss until evenly mixed.

        Add Liquid Ingredients: In a separate bowl, whisk together the broth and beaten eggs. Gradually pour this mixture over the bread and vegetable mixture, tossing gently until the bread is evenly moistened.

          Bake the Stuffing: Transfer the stuffing into a greased baking dish. Cover with aluminum foil and bake in the preheated oven for about 30 minutes. After 30 minutes, remove the foil and bake for an additional 15 minutes, or until the top is crispy and golden brown.
