Ingredients

1 ½ cups graham cracker crumbs

½ cup granulated sugar

½ cup unsalted butter, melted

4 (8 oz) packages cream cheese, softened

1 cup granulated sugar

1 teaspoon vanilla extract

4 large eggs

1 cup sour cream

2 tablespoons all-purpose flour

Zest of 1 lemon

2 tablespoons lemon juice

Instructions

Prepare the Crust: Preheat your oven to 325°F (160°C). In a medium mixing bowl, combine the graham cracker crumbs, ½ cup sugar, and melted butter. Mix until well combined and crumbly. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then remove from the oven and let cool.

Make the Filling: In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy. Gradually add in 1 cup of sugar and vanilla extract, mixing until fully combined.

Add Eggs: Add the eggs one at a time, mixing on low speed just until incorporated after each addition. Be careful not to overmix.

Incorporate Additional Ingredients: Add the sour cream, flour, lemon zest, and lemon juice to the cream cheese mixture. Beat on low until smooth and well combined.

Bake the Cheesecake: Pour the filling over the cooled crust in the springform pan. Bake in the preheated oven for about 60-70 minutes, or until the edges are set and the center is slightly jiggly.

Cool the Cheesecake: Turn off the oven and crack the oven door slightly. Allow the cheesecake to cool in the oven for 1 hour. This helps prevent cracks from forming.

Chill: After cooling, refrigerate the cheesecake for at least 4 hours, preferably overnight, to set completely.

Serve: Once chilled, carefully release the cheesecake from the springform pan. Slice into pieces and serve plain or with your choice of toppings like fresh berries or whipped cream.
