1 lb pork shoulder, cut into 1-inch cubes

1 medium onion, thinly sliced

2 cloves garlic, minced

1 (16 oz) jar sauerkraut, drained

2 medium apples, cored and sliced (preferably Granny Smith)

1 cup low-sodium chicken broth

1 tsp caraway seeds

1 tsp smoked paprika

2 tbsp olive oil

Salt and pepper to taste

Fresh parsley for garnish (optional)

Instructions
 

Sear the Pork: In a large skillet, heat olive oil over medium-high heat. Season the pork cubes with salt and pepper. Add them to the skillet in batches, searing until browned on all sides. Remove and set aside.

    Sauté Aromatics: In the same skillet, add the sliced onions and cook until translucent, about 3-4 minutes. Add the minced garlic and sauté for an additional 1 minute until fragrant.

      Add Apples & Sauerkraut: Stir in the sliced apples and cook for 2 minutes until they begin to soften. Then, add the sauerkraut and caraway seeds. Mix until well combined.

        Combine with Broth: Return the seared pork to the skillet and pour in the chicken broth. Sprinkle in the smoked paprika and stir to combine. Bring the mixture to a simmer.

          Cook & Infuse Flavors: Cover the skillet and reduce the heat to low. Let it cook for 25-30 minutes, stirring occasionally to ensure the pork is tender and the flavors meld beautifully.

            Taste & Adjust: Once the pork is tender, taste and adjust seasoning with additional salt and pepper if necessary.

              Serve: Garnish with fresh parsley, if using, and serve hot. This dish pairs well with crusty bread or mashed potatoes.
