1 lb boneless, skinless chicken breasts, diced

8 oz mushrooms, sliced (shiitake, cremini, or button)

1 medium onion, chopped

2 cloves garlic, minced

4 cups low-sodium chicken broth

2 cups kale or spinach, roughly chopped

1 medium carrot, diced

1 celery stalk, diced

1 teaspoon dried thyme

1 teaspoon dried oregano

Salt and pepper to taste

2 tablespoons olive oil

1 tablespoon lemon juice

Fresh parsley for garnish (optional)

Instructions
 

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent and fragrant, about 3-4 minutes.

    Cook the Chicken: Add the diced chicken to the pot and cook until the chicken is browned on all sides, approximately 5-7 minutes. Stir occasionally to ensure even cooking.

      Add Vegetables: Stir in the sliced mushrooms, diced carrot, and diced celery. Cook for another 5 minutes until the mushrooms begin to soften.

        Pour in the Broth: Add the low-sodium chicken broth to the pot, and bring the mixture to a gentle boil. Reduce the heat to low.

          Season the Soup: Add the dried thyme, oregano, salt, and pepper to taste. Allow the soup to simmer for about 20 minutes, letting the flavors meld together.
