Ingredients
  

1 cup quinoa

2 cups vegetable broth (or water)

1 red bell pepper, diced

1 yellow zucchini, sliced

1 cup cherry tomatoes, halved

1 small red onion, diced

2 tablespoons olive oil

1 teaspoon garlic powder

Salt and pepper to taste

1 avocado, sliced

Fresh basil leaves for garnish

Juice of 1 lemon

Cook the Quinoa: Rinse the quinoa under cold water. In a pot, combine the quinoa and vegetable broth. Bring to a boil, then reduce the heat, cover, and simmer for about 15 minutes or until the quinoa is fluffy and the liquid is absorbed. Remove from heat and let it sit covered for 5 minutes, then fluff with a fork.

    Prepare the Vegetables: While the quinoa is cooking, preheat your grill or grill pan over medium-high heat. In a large bowl, combine the diced red bell pepper, sliced yellow zucchini, halved cherry tomatoes, and diced red onion. Drizzle with olive oil, garlic powder, salt, and pepper, then toss to coat.

      Grill the Veggies: Place the marinated vegetables on the grill. Grill for about 5-7 minutes, turning occasionally, until they are tender and slightly charred.

        Assemble the Bowl: In serving bowls, start with a base of quinoa. Top with the grilled veggies, sliced avocado, and fresh basil leaves. Drizzle with lemon juice for added brightness.
