2 cups mixed berries (strawberries, blueberries, raspberries)

1 cup granulated sugar (divided)

1 tablespoon lemon juice

1 teaspoon vanilla extract

1 cup all-purpose flour

2 teaspoons baking powder

1/2 teaspoon salt

1 cup milk

1/2 cup unsalted butter (melted)

1 teaspoon cinnamon

Optional: whipped cream or vanilla ice cream for serving

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Berries: In a medium bowl, combine the mixed berries, 1/2 cup of granulated sugar, lemon juice, and vanilla extract. Gently toss to combine, and let it sit for about 10 minutes to macerate.

      Make the Batter: In a separate mixing bowl, whisk together the flour, baking powder, salt, the remaining 1/2 cup of granulated sugar, and cinnamon. Pour in the milk and melted butter, stirring until just combined. The batter will be lumpy; do not overmix.

        Assemble the Cobbler: Pour the berry mixture into a greased 9x9-inch baking dish. Then, pour the batter over the berries. Do not stir; the batter will rise while baking.

          Bake: Place the dish in the preheated oven and bake for 40-45 minutes or until the top is golden brown and a toothpick inserted in the center comes out clean.

            Cool and Serve: Let the cobbler cool for a few minutes. Serve warm with whipped cream or a scoop of vanilla ice cream, if desired.
