Coconut Cream Oats: Breakfast Bliss

This coconut cream oats: breakfast bliss is a simple breakfast recipe made with everyday ingredients. Perfect for busy days and family meals.

Ingredients
  

1 cup rolled oats

2 cups coconut milk (or any plant-based milk for a lighter version)

1/2 teaspoon vanilla extract

1 tablespoon maple syrup (or honey)

1/4 teaspoon salt

1/2 cup shredded unsweetened coconut

1/2 ripe banana, sliced

1/4 cup fresh mango, diced

1 tablespoon chia seeds (optional)

Toasted coconut flakes and mint leaves for garnish

Instructions
 

In a medium saucepan, combine the rolled oats, coconut milk, vanilla extract, maple syrup, and salt over medium heat. Stir to combine.

    Bring the mixture to a gentle simmer, then reduce the heat to low. Cook for about 5-7 minutes, stirring occasionally, until the oats have absorbed most of the liquid and are creamy.

      If using, stir in the chia seeds for added texture and nutrition during the last minute of cooking.

        Once the oats are cooked, remove from heat and stir in the shredded coconut for an extra layer of coconut flavor.

          Serve the coconut cream oats in bowls, topped with sliced bananas, diced mango, and a sprinkle of toasted coconut flakes.

            Garnish with fresh mint leaves for an aromatic touch and a pop of color.
