4 boneless, skinless chicken breasts

1 cup coconut milk (full fat for creaminess)

Zest and juice of 2 limes

3 tablespoons honey or maple syrup

2 garlic cloves, minced

1 teaspoon fresh ginger, minced

1 teaspoon soy sauce (or tamari for gluten-free)

1/2 teaspoon red pepper flakes (optional for heat)

Salt and pepper to taste

2 tablespoons olive oil

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Marinate the Chicken: In a bowl, mix together coconut milk, lime zest, lime juice, honey, minced garlic, minced ginger, soy sauce, red pepper flakes, salt, and pepper. Add the chicken breasts, ensuring they are fully submerged in the marinade. Cover and let marinate in the refrigerator for at least 1 hour (or up to overnight for maximum flavor).

    Sear the Chicken: Heat olive oil in a large skillet over medium-high heat. Remove chicken from marinade (save the marinade for later) and sear the chicken for about 5-7 minutes on each side until golden brown and cooked through. Transfer the chicken to a plate and cover to keep warm.

      Prepare the Sauce: In the same skillet, pour in the reserved marinade. Bring to a gentle boil, then reduce heat and simmer for about 5-7 minutes, or until the sauce thickens slightly.

        Combine and Serve: Return the cooked chicken to the skillet, coating it with the coconut lime sauce. Cook for an additional 2-3 minutes to reheat the chicken and absorb the flavors.

          Garnish: Serve the Coconut Lime Chicken hot, garnished with chopped cilantro and lime wedges on the side.
