4 boneless, skinless chicken breasts

1 cup coconut milk

Zest and juice of 2 limes

2 tablespoons honey (or maple syrup for a vegan option)

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

1 teaspoon ground cumin

½ teaspoon red pepper flakes (adjust to taste for heat)

Salt and pepper to taste

2 tablespoons olive oil

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Marinate the Chicken: In a bowl, combine coconut milk, lime zest, lime juice, honey, minced garlic, grated ginger, cumin, red pepper flakes, salt, and pepper. Whisk until well blended. Add chicken breasts to the marinade, ensuring each piece is fully coated. Cover and refrigerate for at least 1 hour, or up to 4 hours for richer flavor.

    Preheat the Grill or Skillet: If grilling, preheat your grill to medium-high heat. If using a skillet, heat olive oil in a large skillet over medium-high heat.

      Cook the Chicken: Remove chicken from the marinade and allow excess to drip off. For grilling, place chicken on the grill and cook for 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C). For skillet cooking, place chicken in the skillet and cook for about 6-7 minutes per side, turning occasionally, ensuring a beautiful golden crust forms.

        Prepare the Sauce: While the chicken is cooking, take the remaining marinade and pour it into a small saucepan. Bring to a simmer over medium heat and cook for about 5-7 minutes, allowing the sauce to thicken slightly. Stir occasionally.

          Serve: Once the chicken is cooked through, remove from heat. Let it rest for a few minutes before slicing. Drizzle the thickened coconut lime sauce over the sliced chicken and garnish with fresh cilantro. Serve with lime wedges on the side.
