1 lb fresh white fish fillets (such as cod or tilapia), cut into bite-sized pieces

1 can (14 oz) coconut milk

2 cups fish or vegetable broth

1 cup cherry tomatoes, halved

1 small red onion, finely chopped

2 cloves garlic, minced

1-inch piece of ginger, grated

1-2 green chilies, sliced (adjust for heat preference)

Zest and juice of 2 limes

1 tablespoon fish sauce

1 teaspoon sugar (optional)

Salt and pepper to taste

Fresh cilantro, for garnish

Lime wedges, for serving

Instructions
 

In a large pot over medium heat, add a drizzle of oil and sauté the chopped red onion for about 3 minutes until softened. Add the minced garlic, grated ginger, and sliced green chilies, and cook for an additional 1-2 minutes until fragrant.

    Pour in the fish or vegetable broth and bring to a gentle simmer. Once simmering, stir in the coconut milk, cherry tomatoes, lime zest, fish sauce, and sugar (if using). Let the mixture simmer for about 5-7 minutes.

      Gently add the fish pieces into the pot, ensuring they are submerged in the soup. Cook for about 5-8 minutes or until the fish is cooked through and flaky.

        Stir in the fresh lime juice and season the soup with salt and pepper to taste.

          Remove from heat and ladle the soup into bowls. Garnish with fresh cilantro and serve with lime wedges on the side.
