2 3/4 cups shredded sweetened coconut

1/2 cup granulated sugar

1/4 cup all-purpose flour

1/4 teaspoon salt

4 large egg whites

1 teaspoon vanilla extract

1/2 teaspoon almond extract (optional)

8 oz semi-sweet chocolate (for dipping, optional)

Instructions
 

Preheat the Oven: Preheat your oven to 325°F (163°C) and line a baking sheet with parchment paper.

    Mix Dry Ingredients: In a large mixing bowl, combine the shredded coconut, sugar, flour, and salt. Stir well to combine the dry ingredients evenly.

      Add Wet Ingredients: In a separate bowl, whisk the egg whites until frothy but not stiff. Add the vanilla extract and almond extract, if using, then mix well.

        Combine Mixtures: Pour the egg mixture into the coconut mixture. Using a spatula, gently fold everything together until the mixture is well combined and sticky.

          Shape the Macaroons: Using a spoon or a cookie scoop, drop generous tablespoons of the mixture onto the prepared baking sheet, spacing them about 1 inch apart.

            Bake: Bake the macaroons in the preheated oven for 20-25 minutes, or until they are golden brown on the outside and still chewy in the center.

              Cool: Remove the macaroons from the oven and let them cool on the baking sheet for about 10 minutes. Then, transfer them to a wire rack to cool completely.

                Optional Chocolate Dip: If desired, melt the chocolate in a microwave-safe bowl in 30-second intervals, stirring in between until smooth. Dip the bottoms of the cooled macaroons in the chocolate and place them back on the wire rack to set.
