Colcannon Recipe

This colcannon recipe is a simple dinner recipe made with everyday ingredients. Perfect for busy days and family meals.

Ingredients
  

2 lbs russet potatoes, peeled and chopped

1 cup cabbage, finely shredded

1 cup kale, finely chopped

1 cup scallions (green onions), chopped

½ cup whole milk

¼ cup unsalted butter

Salt and pepper to taste

Fresh parsley for garnish (optional)

Instructions
 

Boil Potatoes: Place the chopped potatoes in a large pot and cover them with cold water. Bring to a boil and cook until tender, about 15-20 minutes. Drain and return to the pot.

    Prepare Greens: While the potatoes are boiling, in a separate pan, melt 2 tablespoons of butter over medium heat. Add the cabbage and kale, and sauté for about 5-7 minutes until wilted and tender. Stir in the chopped scallions and sauté for another 2 minutes. Remove from heat and set aside.

      Mash Potatoes: In the pot with the drained potatoes, add the remaining butter and milk. Mash until smooth and creamy, then stir in the sautéed greens mixture. Season with salt and pepper to taste.

        Serve: Transfer the colcannon to a serving dish. Create a small well in the center and add a pat of butter for an extra rich touch. Garnish with fresh parsley if desired.
