2 cups whole wheat rotini pasta

1 cup cooked chicken breast, shredded or cubed

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 cup red bell pepper, diced

1/4 cup red onion, finely chopped

1/2 cup black olives, sliced

1/2 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

1/3 cup olive oil

3 tablespoons red wine vinegar

1 tablespoon Dijon mustard

1 teaspoon garlic powder

Salt and pepper to taste

Cook the Pasta: In a large pot of salted boiling water, cook the rotini pasta according to the package instructions until al dente. Drain and rinse under cold water to cool it down. Set aside.
