1 large English cucumber

1 ripe avocado

1 cup cooked quinoa

1/4 cup red bell pepper, finely diced

1/4 cup carrot, grated

1 tablespoon fresh cilantro, chopped

1 tablespoon lime juice

Salt and pepper to taste

2 tablespoons sesame oil

1 teaspoon soy sauce

1 teaspoon sriracha (adjust to taste)

1 teaspoon toasted sesame seeds

Prepare the Cucumber: Using a mandoline slicer or a vegetable peeler, slice the cucumber lengthwise into thin strips. Lay the strips flat on a paper towel and sprinkle lightly with salt to draw out moisture. Let sit for about 10 minutes, then pat dry with another paper towel.

    Make the Filling: In a mixing bowl, combine the ripe avocado, cooked quinoa, red bell pepper, grated carrot, cilantro, lime juice, salt, and pepper. Mash the avocado gently to combine without completely losing the texture. Adjust seasoning if necessary.

      Assemble the Rolls: Take a cucumber strip and place a spoonful of the avocado-quinoa filling at one end. Roll it up tightly to form a sushi-like roll. Repeat with the remaining cucumber strips and filling.
