Ingredients
  

6 pork sausages (or your preferred variety)

4 large potatoes, peeled and chopped

1/2 cup milk

4 tablespoons butter

Salt and pepper to taste

1 onion, thinly sliced

2 tablespoons olive oil

1 cup beef or vegetable broth

1 tablespoon Worcestershire sauce

1 teaspoon mustard (optional)

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Sausages:

    - In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the sausages and cook for about 10 minutes, turning them occasionally until they are browned and cooked through. Remove them from the skillet and set aside.

      Prepare the Potatoes:

        - While the sausages cook, bring a large pot of salted water to a boil. Add the chopped potatoes and cook for about 15 minutes or until a fork easily pierces them. Drain and return them to the pot.

          Make the Mash:

            - In the pot with drained potatoes, add milk, butter, salt, and pepper. Mash until smooth and creamy, then set aside and keep warm.

              Onion Gravy:

                - In the same skillet used for the sausages, add the sliced onion and cook over medium heat for about 5 minutes until softened.

                  - Pour in the beef or vegetable broth and add the Worcestershire sauce and mustard (if using). Stir and bring to a simmer. Allow to cook for about 5 minutes until slightly thickened.

                    Combine:

                      - Return the cooked sausages to the skillet with the gravy, allowing them to heat through for a couple of minutes.

                        Serve:

                          - Plate the creamy mashed potatoes and top with the sausages and onion gravy. Garnish with chopped parsley if desired.
