1 medium onion, diced

3 cloves garlic, minced

2 large carrots, diced

2 celery stalks, diced

4 cups fresh spinach, roughly chopped

1 can (14 oz) diced tomatoes, with juice

4 cups chicken or vegetable broth

1 tablespoon Italian seasoning

1 teaspoon red pepper flakes (optional, for heat)

Salt and pepper, to taste

1 cup heavy cream or half-and-half (optional for richness)

Fresh basil or parsley, for garnish

Grated Parmesan cheese, for serving (optional)

Instructions
 

In a large pot or Dutch oven, heat a splash of olive oil over medium heat. Add the sausage, breaking it apart with a wooden spoon, and cook until browned (about 5-7 minutes). Drain excess fat if necessary.

    Add the diced onion, carrots, and celery to the pot. Sauté for about 5 minutes, or until the vegetables start to soften.

      Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

        Pour in the diced tomatoes (with their juice) and the broth. Add the Italian seasoning, red pepper flakes (if using), salt, and pepper. Bring the mixture to a gentle boil.
