½ cup unsweetened cocoa powder

1 tsp baking powder

1 tsp baking soda

½ tsp salt

1 cup whole milk

½ cup vegetable oil

2 large eggs

2 tsp vanilla extract

1 cup crushed chocolate sandwich cookies (plus more for decoration)

1 cup heavy cream

½ cup powdered sugar

1 tsp vanilla extract (for whipped cream)

Chocolate ganache (optional, for drizzling)

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans, or line them with parchment paper for easier removal.

    Mix Dry Ingredients: In a large mixing bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt until well combined.

      Combine Wet Ingredients: In another bowl, whisk together the milk, vegetable oil, eggs, and 2 teaspoons of vanilla extract until smooth.

        Combine Mixtures: Slowly pour the wet mixture into the dry ingredients. Stir gently until just combined, being careful not to overmix. Fold in the crushed chocolate sandwich cookies until evenly distributed throughout the batter.

          Bake the Cakes: Divide the batter evenly between the two prepared cake pans. Bake in the preheated oven for 25–30 minutes, or until a toothpick inserted into the center comes out clean. Allow the cakes to cool in the pans for about 10 minutes, then transfer them to wire racks to cool completely.

            Prepare the Whipped Cream: In a mixing bowl, combine heavy cream, powdered sugar, and 1 teaspoon of vanilla extract. Using an electric mixer, whip the cream until stiff peaks form. Set aside.
