Ingredients
  

1 cup cottage cheese (preferably low-fat)

1 medium cucumber, diced

1 small red onion, finely chopped

1 cup cherry tomatoes, halved

ΒΌ cup fresh dill, chopped

1 tablespoon olive oil

1 tablespoon lemon juice

Salt and pepper to taste

Optional: a sprinkle of paprika for garnish

Instructions
 

In a large mixing bowl, combine the cottage cheese, diced cucumber, chopped red onion, and halved cherry tomatoes.

    Add the freshly chopped dill to the bowl, mixing gently to combine all ingredients without breaking the cottage cheese.

      In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper until smooth.

        Pour the dressing over the salad mixture and toss gently to coat all the ingredients evenly.

          Taste and adjust seasoning if needed, adding more salt, pepper, or lemon juice as desired.

            Let the salad sit for about 10 minutes at room temperature to allow the flavors to meld together.

              Serve chilled or at room temperature and garnish with a sprinkle of paprika if using.
