Ingredients
  

  • 2 cups cottage cheese preferably low-fat, drained
  • 1 cup whole wheat flour
  • 1 cup oats rolled oats for texture
  • 1/2 teaspoon baking powder for leavening
  • 1/2 teaspoon baking soda for leavening
  • 1 teaspoon honey natural sweetener
  • 2 large eggs beaten
  • 1/4 cup olive oil for moisture
  • 1 teaspoon sea salt or to taste
  • 1/2 teaspoon black pepper freshly ground

Instructions
 

  • Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan with olive oil or line it with parchment paper.
  • In a large mixing bowl, combine the cottage cheese, whole wheat flour, oats, baking powder, baking soda, honey, beaten eggs, olive oil, sea salt, and black pepper. Mix until all ingredients are well incorporated and form a cohesive batter.
  • Pour the batter into the prepared loaf pan, smoothing the top with a spatula. Tap the pan gently on the countertop to remove any air bubbles.
  • Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
  • Remove the bread from the oven and let it cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
  • Once cooled, slice the bread using a serrated knife and serve immediately or store in an airtight container for later use.
