Ingredients
  

  • 2 cups low-fat cottage cheese drained
  • 1 tablespoon ranch seasoning mix store-bought or homemade
  • 1/2 teaspoon dried dill weed
  • 3 cloves garlic minced
  • 1 cup chopped spinach fresh
  • 1 medium red bell pepper sliced
  • 1 medium carrot shredded
  • 4 whole wheat tortillas tortillas large
  • 2 tablespoons olive oil for cooking
  • salt and pepper to taste

Instructions
 

  • In a bowl, combine the low-fat cottage cheese, ranch seasoning mix, dried dill weed, and minced garlic. Mix well until all ingredients are fully incorporated.
  • Lay out the whole wheat tortillas on a flat surface. Distribute the spinach evenly over each tortilla, followed by the sliced red bell pepper and shredded carrot.
  • Spoon the cottage cheese mixture onto the center of each tortilla, then fold in the sides and roll tightly to form a wrap. Ensure the filling is well enclosed.
  • In a skillet, heat the olive oil over medium heat. Place the wraps seam-side down into the skillet and cook for about 3-4 minutes on each side, or until golden brown and crispy.
  • Remove the wraps from the skillet and let them cool slightly. Slice each wrap in half diagonally for easy eating.
