Ingredients
  

4 bone-in pork chops (about 1-inch thick)

1 cup buttermilk

1 cup all-purpose flour

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper, to taste

1/2 cup cornmeal

Vegetable oil, for frying

4 slices of bacon, chopped

2 tablespoons unsalted butter

2 tablespoons all-purpose flour (for gravy)

2 cups milk

1/2 teaspoon black pepper

1/4 teaspoon cayenne pepper (optional)

Chopped fresh parsley, for garnish

Instructions
 

Brine the Pork Chops: In a large bowl, soak the pork chops in buttermilk for at least 30 minutes to 2 hours (the longer, the better).

    Prepare the Bread Coating: In another bowl, mix flour, garlic powder, onion powder, smoked paprika, cornmeal, salt, and pepper.

      Coat the Chops: Remove the pork chops from the buttermilk and let the excess drip off. Dredge each chop in the flour mixture, pressing firmly to ensure a good coating. Set aside.

        Cook the Bacon: In a large skillet over medium heat, cook the chopped bacon until crispy. Remove the bacon with a slotted spoon and let it drain on paper towels. Leave about 2 tablespoons of the bacon drippings in the skillet.

          Fry the Pork Chops: Add enough vegetable oil to the remaining bacon drippings to cover the bottom of the skillet. Heat the oil over medium-high heat. Once hot, carefully place the breaded pork chops in the skillet. Cook for about 4-5 minutes on each side or until golden brown and cooked through (internal temperature should reach 145°F). Remove and drain on paper towels.

            Make the Gravy: In the same skillet (with some residual fat), melt the butter over medium heat. Stir in the flour and cook for about 1-2 minutes until light brown. Gradually whisk in the milk, stirring constantly until the mixture thickens (about 5-7 minutes). Season with black pepper and cayenne pepper (if using). Stir in the crispy bacon bits.

              Serve: Plate the fried pork chops and generously drizzle the bacon gravy over them. Garnish with chopped fresh parsley.

                Enjoy: Serve alongside your favorite sides, like mashed potatoes, green beans, or biscuits.
